What made you become a certified personal chef?
I wanted to be able to reach a level of skill that would allow doors to open in the food industry based on expertise.
How long did it take you to become a certified chocolatier?
It took me about about 8 months. I decided I wanted to take some advanced classes so it took me a little longer than normal. This allowed to gain skill, increase my knowledge, and learn different techniques that I have found extremely useful.
What are your favorite food items to make?
I love making various types of bonbons, especially those with honey caramel. I also like to make “zauces” These are my signature sauces that have a lot of zing.
Do you eat a lot of chocolate everyday?
No I don’t but I do often taste the fresh chocolate(s) to make sure that it has the characteristics that distinguish fine European chocolate.
